Vegetables stuffed with oatmeal

  • 3 peppers for stuffing
  • 1 grated carrot
  • 1 chopped red pepper
  • 1 small onion, finely chopped
  • 150g oatmeal
  • A little chopped parsley
  • 1 tablespoon tomato paste
  • 1/2 teaspoon brown sugar
  • 30g grated milner
  • 3 tablespoons olive oil
  • Salt
  • Pepper
  • Oregano
  • Paprika


In a saucepan with boiling water add the oatmeal and once it boils, leave it to soak for about 20 minutes. Finely chop the pepper, onion and carrot (if we do not want it so crispy, we can grate it in the grater). In a bowl add the chopped vegetables, oatmeal, grated cheese, tomato paste, olive oil, salt, pepper, oregano, brown sugar and paprika and mix. Cut the peppers for stuffing in half vertically and fill them with the mixture we made. Bake in a preheated oven at 200 degrees for about 40 minutes covered with foil. Uncover, add a little grated cheese and bake for another 5-10 minutes.
