- 1 zucchini
- 1 eggplant
- 1 small sweet potato
- 1 small potato
- 1 large carrot
- 1 large red onion
- 2 peppers
- 4 tablespoons olive oil
- 1 tablespoon mustard
- 1 orange set
- Salt
- Pepper
- Paprika
- Oregano
- Mint (Optional)
- Parsley (Optional)
Implementation
Cut all the vegetables into different sizes (vegetables such as potatoes and carrots that need more cooking time are cut into smaller pieces). In a small bowl, squeeze the orange and add the mustard and olive oil and mix (if you want you can put 2 oranges).Put them all together in a bowl and add salt, pepper, paprika, oregano and mint and mix. Place in a pyrex and bake in a preheated oven at 200 degrees covered with foil for about 40 minutes. Uncover and bake for another 15 minutes until they get a nice color.
